1thw: Creativity in the SHOP

In moments of boredom or concern, seeing how beautiful the structures of nature are can reassure and inspire! I went back to my favourite molecules and selected some protein structures to bring some dynamism and creativity in our SHOP. Have a look at the NEW items with this protein!

This crystal structure belongs to the THE SWEET PROTEIN THAUMATIN that is a protein much sweeter than common sugar but giving very little calories! Is the sweetener of the future coming from biotech?

Thaumatin, the sweet protein.

Proteins can be sweet and thaumatin is one of the best int his respect. The thaumatins were first found as a mixture of proteins isolated from the katemfe fruit (Thaumatococcus daniellii Bennett) (marantaceae) of west Africa. Some proteins in the thaumatin family of sweeteners are roughly 2000 times more potent than sugar. Although very sweet, thaumatin’s taste is markedly different from sugar’s. The sweetness of thaumatin builds very slowly. Perception lasts a long time, leaving a liquorice-like aftertaste at high usage levels. This crystal structure belongs to the Troponin C that is a protein looking like a double hammer and very important for our heart!

Troponin C

Troponin C is key for muscle contraction. for its action, it binds calcium ions and it is a component of thin filaments, along with actin and tropomyosin. (read more at Wikipedia, Sciencedirect and DOI: 10.1016/s1097-2765(01)00318-5)

This crystal structure belongs to the Crystal Structure of the Lumenal Domain of Calnexin that is a protein with a very long appendage… like a ball on the leash!

It consists of a large (50 kDa) N-terminal calcium-binding lumenal domain, a single transmembrane helix and a short (90 residues), acidic cytoplasmic tail. Calnexin is a chaperone, meaning that its job is to assist protein to reach their correct folding and ensure quality control.
